QUIMBAYA is the first signature Colombian cuisine restaurant in Madrid, recently recommended by the Michelin Guide Spain & Portugal 2021.
Located in Calle Zurbano 63, one of the most exclusive gastronomic areas of Madrid, we present a new restaurant, enriched with culinary traditions and techniques from there and here. a proposal inspired by the flavours of ColombiaOur cuisine, enriched with culinary traditions and techniques from there and here, under the contemporary, creative and very personal interpretation of our chef owner Edwin Rodríguez.
Our concept is presented through a Tasting Menu, which is our speciality. Through this experience we travel through the Caribbean, the Pacific, the Andes, the Orinoco and the Amazon; different gastronomic areas of Colombia that are linked together through the stories that inspire our chef to create the dishes.
We are a different kind of restaurant. We offer a signature dining experience and, although we are inspired by Colombia, we don't do traditional Colombian cuisine; we create unique experiences that we recommend you have enough time to enjoy to the full.

- Tasting Menu: Tuesday to Saturday lunch from 13:30 to 16:30 & dinner from 20:00 to 0:00; Sundays from 13:30 to 16:30.
- Carte service: Tuesday to Friday lunch from 13:30 to 16:30 & dinner from 20:00 to 0:00. On Saturdays, Sundays and public holidays we only offer our Tasting Menu.
- Bar service: Tuesday to Saturday lunch from 13:30 to 16:30 & dinner from 20:00 to 0:00; Sundays from 13:30 to 16:30.
- Catering, In-house Chef & Private Events at the restaurant: Monday to Sunday on request.
A Unique Experience
Colombian chef with more than 22 years of experience, he is the owner of Quimbaya Restaurant and Catering.
In addition to having teamed up for almost a decade with chef Pepe Rodríguez of the restaurant El Bohío (1 Michelin Star), since 2013 Edwin has represented Colombian cuisine at various private events and events with large audiences organised by ProColombia and the Colombian Embassies in Seoul, Madrid and London, such as FITUR, MADRID FUSIÓN, ARCO, WTM, ALIANZA DEL PACÍFICO SUMMIT, among others.
